Marry Me Meatballs

 I can’t say no to crockpot recipes and Your Barefoot Neighbor shared this one so I had to try it. I’d like to say my children aren’t picky but they all have their own quirks when it comes to food and my youngest daughter didn’t care for the sun-dried tomatoes. Everyone else enjoyed it as it is.  Marry Me Meatballs Ingredients 2 lbs frozen Italian meatballs 4 C chicken stock 1 jar sun-dried tomatoes, drained and chopped  1 can cream of chicken soup Italian seasoning Garlic powder Onion powder  Red pepper flakes 2 lbs gnocchi (shelf stable ones) 1/2 pint heavy whipping cream Baby spinach  Shredded Parmesan cheese (I used shaved Parmesan) Directions Add meatballs, chicken stock, cream of chicken soup, sun-dried tomatoes and seasonings to crockpot. Cook on high for 3 hours. When that is done add in your gnocchi, heavy cream and baby spinach and cook for another 30 minutes on high. Top with the Parmesan cheese. Serve with garlic toast. 

3 Ingredient Rotel Dip

There are multiple ways you can make Rotel Dip but this is our favorite and figured because it hasn’t been shared here yet I better document it so my kids have it when they need it someday. It’s great to bring to a potluck or family get together and is super simple! Let’s get to it!  Rotel Dip Ingredients  1 lb Jimmy Dean sausage (this is one of the rare times I buy store bought sausage) 2 lbs if doubled 2 blocks of Philadelphia Cream Cheese (this is the only brand we cook with, it just works best) 4 if doubled   2 cans of Rotel Original - undrained 3 if doubled Directions  Brown your sausage, drain off the grease. Add in your cream cheese (I chop it into smaller blocks). Add in your Rotel. Mix until everything is well incorporated. Put in a crockpot on low or warm and give it a good stir every so often. That’s it! Super simple! 

Crockpot season is the best season

 This recipe has been in my collection for many years now. A dear friend from middle school/high school shared it with me and we haven’t made it in a hot minute so when my husband said stroganoff I immediately thought of her and went to get what was needed. With each year we get older and unfortunately have grown apart but I still think of her often. So for the sake of where I got this recipe from it will forever be known as Amber’s Stroganoff. This recipe is doubled! Half it if you’re not feeding a crowd. Amber’s Crockpot Stroganoff  Ingredients 2-3 lbs stew meat 2 cans cream of onion 2 cans golden mushroom 2 cans of sliced mushrooms 2 blocks cream cheese 16 oz sour cream Egg noodles Instructions Get your crockpot out Put a liner in it or spray it well Place the stew meat, soups and mushrooms in the crockpot and cook on low for 8-10 hours With an hour left add in your cream cheese (I chunk mine up) and your sour cream. Creamy Chicken Noodle Soup

 If you’re following along you know we like to utilize our crockpot often. However there are not many recipes we repeat or love simply because they don’t turn out (ie. the food is mush or over cooked or ..) whatever! With that said there are some amazing recipes too! I’m hopeful this one is one of those. It’s in the crockpot now for dinner tonight because soup is a staple when it’s cold out!! Biscuits & Gravy Crockpot Casserole

Crockpot cooking is the best way to cook while camping besides the grill or campfire. It’s a no brainer for an easy breakfast. I could have sworn I already shared this recipe but I cannot locate it so here it goes..  **Let’s get one thing straight right off the bat, if you’ve got left over sausage gravy from a previous meal, use it! Don’t waste your time making new gravy if you don’t have to. Crockpot Cheesy Potatoes

 Ok ok ok! I know, MORE CHEESY POTATOES?!? YES!!!! We are huge fanatics and love our cheesy potatoes! Here is the crockpot version we are hooked on! It’s a super great recipe for while camping too to prepare an easy delicious side dish!  Ingredients 1 - 32 oz bag frozen diced potatoes 1 medium onion diced 1 cup sour cream 1 - 10.5 oz can cream of chicken soup 1/2 tsp garlic powder 1/2 tsp onion powder Salt and pepper 4 Tbs butter melted 2 1/2 cup shredded cheddar cheese Instructions 1. In your crockpot add a liner and spray it well with non-stick spray, add your potatoes, onions, sour cream, soup, garlic powder, onion powder, salt, pepper, butter and 1 1/2 cup shredded cheese. Give it a good stir to mix well or pre mix in a bowl then dump in the crockpot. 2. Place lid on and cook on low for 4 hours. 3. Remove lid and sprinkle with remaining cup of cheese and cover again for about 15 minutes until cheese is melted.

Crockpot Tater Tot Breakfast Casserole

This is the best crockpot breakfast we’ve ever had! It has now become a staple dish in our home/camper! The best part is we use a crockpot liner so it’s an easy breezy clean up! Just spray the liner bag instead of the crockpot itself!   Ingredients 32 oz bag frozen Tater Tots (Extra Crispy) 1 pound ground breakfast sausage 6 large eggs 2 tablespoon heavy cream 1/2 teaspoon dried thyme 1/2 teaspoon garlic powder 1/4 teaspoon salt 1/8 teaspoon pepper 1 cup shredded colby jack cheese Instructions 1. Spray slow cooker well with nonstick cooking spray 2. Add about ⅔ of the bag of tater tots in bottom of slow cooker crock 3. Whisk together eggs with cream, thyme, garlic powder, salt and pepper 4. Pour over tater tots in slow cooker 5. In a skillet over medium high heat, brown sausage while breaking apart with spatula until cooked through 6. Add cooked sausage on top of eggs and tater tots 7. Crockpot Chicken and Dumplings

Easy chicken and dumplings made in the crockpot! Great for camping trips too! I use biscuit dough for easy, fluffy dumplings every time! Crockpot Chicken and Dumplings Ingredients 2 pounds boneless skinless chicken breasts or thighs 1 sweet onion diced 1 clove garlic minced or 1/2 tsp. minced garlic from a jar in a pinch 2 cans (10.75 ounces each) cream of chicken w/ herbs 3 cups chicken broth 1 teaspoon poultry seasoning 1 teaspoon dried parsley 1 teaspoon cracked black pepper 1 package 8-count refrigerated biscuit dough Instructions  Add all of the ingredients except for the biscuit dough to a 6 quart slow cooker and stir to combine. Cover and cook on high for 3 hours or low for 6 hours.  When chicken is cooked through and tender, use two forks to shred the meat. Stir to combine. Broccoli Cheese - Best crockpot soup!

Crack potato and broccoli cheese soup   Ingredients: 1 (30 to 32-oz) bag frozen shredded hash browns 3 (14.5-oz) cans chicken broth 1 (10.75-oz) can broccoli cheese soup 2 cups chopped fresh broccoli 1 (1-oz)  package ranch salad dressing mix 1 pound bacon, cooked and chopped 2 cups shredded cheddar cheese 1 (8-oz) package cream cheese Instructions: Combine hash browns, chicken broth, broccoli cheese soup, chopped broccoli, Ranch dressing mix, and bacon in a 6-quart slow cooker. Cover and cook on LOW for 8 hours. 15 minutes before serving, stir in cheddar cheese and cream cheese until melted. Notes: Can substitute 1 cup precooked bacon for freshly cooked bacon. Philadelphia brand cream cheese melts best in this recipe.

Crockpot Potato Soup

 Crockpot Potato Soup is delicious and easy and who doesn’t love meals in the crockpot that taste good?! This recipe is from Gimme some Oven.  Another easy and cheap recipe but this time it involves the crockpot! This recipe comes from Moms With Crockpots.
