Creamy Mashed Potatoes

Only the BEST mashed potatoes around! These are from the Pioneer Woman and we’ve made them once and I was hooked! It’s more work than I put into our usual mashed potatoes but it’s worth it. Her recipe makes a LOT so if you’re not feeding a baseball team maybe half it. I will be halving it for our family of 6 the next time we make these. We never really use leftover mashed potatoes so they end up in the trash. If you’ve got any great ideas for left overs I’d love to hear them! Creamy Mashed Potatoes Ingredients 5 lb. russet or Yukon Gold potatoes 3/4 c. butter 1 package (8 oz.) cream cheese, softened 1/2 c. (to 3/4 cups) half-and-half 1/2 tsp. (to 1 teaspoon) Lawry's Seasoned Salt 1/2 tsp. (to 1 teaspoon) black pepper Directions -Peel and cut the potatoes into pieces that are generally the same size. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook for 30 to 35 minutes. When they’re cooked through, the fork should easily slide into the potatoes ...

My Favorite Potato Salad

I’m not sure how I haven’t posted this here yet. It’s legit my FAVORITE potato salad! It’s not too mustard-y and I’m often asked to make it for potlucks/get togethers/etc. It truly is a summer staple too. Yes I went there. I know it’s a few months away yet but I’m dreaming of warmer weather and sunshine and camping!!!  This is so well loved that I drove to TN for my best friends oldest daughters graduation and made this for her because she too LOVES it! I mean it’s not the only reason I went to see them! My Bug graduated! That makes me a proud bonus mom! It would also be a lie if I said I didn’t take every opportunity to see my bestie and her girls! Ok, ok! Get on with it already! Right?!? Yeah yeah I hear ya!! Mary’s Potato Salad Ingredients 2 pounds yukon gold potatoes (about 6 medium) 1 ½ cups mayonnaise 1 tablespoon white vinegar 1 tablespoon yellow mustard 3-4 tablespoons chicken broth 1 teaspoon salt ¼ teaspoon pepper 2 stalks of celery, finely chopped ½ cup chopped oni...

Ultimate Sunday Breakfast Casserole

This is a new favorite in our home and it really is a comfort food too! We usually have leftover sausage gravy as we love biscuits and gravy for breakfast in our house and when I stumbled across this recipe on TikTok I knew I had to try this!   Ultimate Sunday Breakfast Casserole Ingredients: 1 lb breakfast sausage 1/3 C flour 3-4 C milk 1/2 tsp seasoned salt - gravy  2 tsp ground black pepper - gravy 1 lb frozen diced potatoes  1 can buttermilk biscuits, each biscuit cut into 4ths 2 C shredded sharp cheddar 6 eggs Salt & pepper to taste - eggs Gravy: (I personally use my left over sausage gravy to make this recipe) Brown 1 lb of breakfast sausage, add 1/3 cup of flour, mix well ensuring the sausage is covered in the flour. You’ll want to cook that for a minute or two. Slowly pour in the milk, stirring constantly. Continue stirring until it comes to a boil and thickens up. (I start with 3 C and add as I see needed based on the consistency, too thick - add a sma...
