Mixed Emotions..

Ok I have to start off with how nice it was to see ALL of my cousins today!! You just cannot imagine how special that was!! I love them all SO much! Melissa, Jessica, Josh, Justyn, Steve, Debbie plus all of my second cousins!!! It was absolutely amazing and so priceless and so special!! We haven't all been together like that in YEARS!! I missed them all SO much!! We even got group pictures snapped so I will upload those as soon as I get to wi-fi!! It made me so so happy to see everyone!! I can't wait to get together again!! Hopefully we don't wait as long as last time to do that!! :)

Also today Lillian and Madelyn met for the first time! They were little buddies.. 'Kissin Cousins' is what we called those beautiful little ladies. Here are a few pictures of the love that they shared.


Today didn't consist of much besides spending time with the family!! Before we got to Apple Valley we really didn't do a whole lot.. Just bummed around I guess you could say.. It was non-eventful! :)

Now what is bothering me beyond belief! This was a family gathering. My family KNOWS how Joe and I feel about Katie's boyfriend, Jimmy, being at the same place as our daughters. It just doesn't happen! We don't approve of it and it's not allowed!! Long story short.. Jimmy should be behind bars! He should also have to register as a sex offender! My oldest daughters were on the porch when my cousin Debbie and I and Lily were heading out for a quick run. I saw Jimmy's car and was instantly upset because I KNEW he was on the porch! I called Joe and asked him to get the girls into the house and in his sight immediately as Jimmy was there! He was as surprised as I was. I'm angered and I'm extremely hurt!!! I held back the tears as I drove home! I'm so damn sick of MY FAMILY choosing him over me and my children! They know we don't want to be around him and that we will not be around him! So what do my parents do, they let him live in their house! So my children and I won't visit them as long as he is there! What does my extended family do?! They invite him to family gatherings! :'( I'm just so hurt that they choose him over us! They know we won't be there if he is. Sure some people think Joe and I over react but obviously they don't understand how much it bothers us as parents to three little GIRLS!!!!

We skipped the 4th of July bash in Apple Valley because he was there!! I wanted to go! I wanted to spend the holiday with my family! I wanted to be left in peace to visit my family tonight without worrying about him being near my children! I don't understand why he can't just stay away from MY FAMILY!!! I don't mean to rant! I'm just hurt.

Maybe some day I'll get over it.. But for now.. We won't be any where near him.. Everyone is entitled to their own opinion so don't you dare sit and bash on Joe and I for how we feel about this.. I am not telling you how to feel so don't do it to me... Vent over! :o)

Marry Me Meatballs

 I can’t say no to crockpot recipes and Your Barefoot Neighbor shared this one so I had to try it. I’d like to say my children aren’t picky but they all have their own quirks when it comes to food and my youngest daughter didn’t care for the sun-dried tomatoes. Everyone else enjoyed it as it is.  Marry Me Meatballs Ingredients 2 lbs frozen Italian meatballs 4 C chicken stock 1 jar sun-dried tomatoes, drained and chopped  1 can cream of chicken soup Italian seasoning Garlic powder Onion powder  Red pepper flakes 2 lbs gnocchi (shelf stable ones) 1/2 pint heavy whipping cream Baby spinach  Shredded Parmesan cheese (I used shaved Parmesan) Directions Add meatballs, chicken stock, cream of chicken soup, sun-dried tomatoes and seasonings to crockpot. Cook on high for 3 hours. When that is done add in your gnocchi, heavy cream and baby spinach and cook for another 30 minutes on high. Top with the Parmesan cheese. Serve with garlic toast. 

Sausage & Rice Casserole

 Last night we failed to pull anything out of the freezers for dinner. Seems to be a common thing here in this house and it’s quite frustrating. I went to my fridge and saw the mushrooms I had gotten and remembered there was a TikTok recipe for them. Y’all this was the EASIEST meal!  Sausage & Rice Casserole Ingredients  1 lb Jimmy Dean sausage 2 pouches of Uncle Ben’s long grain and wild rice  1 1/2 C. Mozzarella or Cheddar cheese, shredded  1 can of golden mushroom soup 1 package of sliced mushrooms  Directions Preheat oven to 350 degrees. Brown sausage, add in mushrooms once almost all the way cooked. While that’s cooking down, pop your rice pouches in the microwave per the instructions. When they’re done add them in with the sausage and mushrooms. Also add in your can of golden mushroom soup and the shredded cheese. Mix it all up and put in the oven for 15 minutes. 

Creamy Au Gratin Potatoes

Oh man! This side dish is absolutely one we will be keeping around! It’d be really good on the smoker too! I do feel like it’s missing some seasonings so the next go around we will play with adding in some smoked paprika and garlic too!  Creamy Au Gratin Potatoes Ingredients   8 medium russet potatoes, thinly sliced 2 medium onion, sliced into rings salt and ground black pepper to taste 6 tablespoons butter 6 tablespoons all-purpose flour 1 teaspoon salt 4 cups milk 3 cups shredded Cheddar cheese   Directions   Gather all ingredients. Preheat the oven to 400 degrees F (200 degrees C). Butter a 2-quart casserole dish. Layer 1/2 of the potatoes in the bottom of the prepared casserole dish; season with salt and pepper. Layer onion slices over top, then top with remaining potatoes. Season again with salt and pepper. Melt butter in a medium saucepan over medium heat.
