Break night & visit with Auntie Debbie

Today I kicked back and was a bum! That's right! I'll admit it! I was a BUM!! I pulled things out of the girls' closet that were on hangers for the garage sale.. I fed the kids and changed diapers, but other then that I relaxed..

We all went up to Joe's parents house again and I had every intention on going through the totes of toys! That just didn't happen! Instead we sat in the backyard for an hour or so and the girls played on their swingsets! Yup swingsetS! They have two up there.. And we watched a portable canopy tent go up..

Then around 5:30 Nathan and I left to go visit Auntie Debbie and her sisters and niece! I didn't hardly get in the house with Nathan and Debbie, Mary and Laura were swarming me to see who would get the baby first! It was absolutely commical!!!! Debbie and Laura made homemade pizza (cheater style) as Debbie said, and Mary brought a chocolate cake with peanut butter frosting! Yummy! I don't think I held Nathan for more then 5 minutes while we were at Debbie's.. It was weird.. After pizza and cake, oh and a Malibu Diet - shhh.., haha Debbie packed up left over pizza for her brother-in-law, Mark, for Joe and for the girls! So I got off the hook for packing Joe a lunch for tomorrow! Thank you Debbie!! :o)

Maybe tomorrow will be a picnic and park day.. We will see if it rains and how well behaved everyone is and how much work I can get done in the morning! I need to go through Lillian's dresser and I need to fold the laundry that is in the baskets that have been in the hallway for the past few days!! Oops! Tomorrow night I have a date with the totes of toys!! Oh and I can't forget that I'll need to go to the post office and the bank tomorrow morning! :-/ Not a fun trip with all four kids but it has to be done!

I forgot to tell you, my blog readers, about last night!!! Speaking of packing Joe a lunch, last night I packed him some chips and a banana to go with the hotdish he had. I walked them down the hall and put them in his lunchbox. When I got back to the living room I got Natalie ready for bed. I put her in her bed and when I came back to the living room again Joe told me that I better go catch that little stink head because she was going to go steal his chips out of his lunchbox! Sure enough as soon as I got to the doorway I watched her dart into her bedroom!! I walked back down the hall to her room to see her ever so quickly shove something under her pillow! I asked her what she had and the response I got was "nothing". So I went to her bed and lifted up her pillow to find.. Yep you got it! Joe's chips!! That little stink turd had gone down the hall into his lunchbox and took his chips all before I got comfortable on the couch after putting her to bed! Joe and I couldn't help but laugh once I got back into the living room WITH Joe's lunchbox in my hand.. Haha! Oh that kid I tell ya!! :) She sure has sparks shooting out her behind!! :o)

Ok it's just about bed time!! I'm sleepy and Nathan is just about done with his bottle! Zzzzzzzzzz Zzzzzzzzzz.. G'nite!

Marry Me Meatballs

 I can’t say no to crockpot recipes and Your Barefoot Neighbor shared this one so I had to try it. I’d like to say my children aren’t picky but they all have their own quirks when it comes to food and my youngest daughter didn’t care for the sun-dried tomatoes. Everyone else enjoyed it as it is.  Marry Me Meatballs Ingredients 2 lbs frozen Italian meatballs 4 C chicken stock 1 jar sun-dried tomatoes, drained and chopped  1 can cream of chicken soup Italian seasoning Garlic powder Onion powder  Red pepper flakes 2 lbs gnocchi (shelf stable ones) 1/2 pint heavy whipping cream Baby spinach  Shredded Parmesan cheese (I used shaved Parmesan) Directions Add meatballs, chicken stock, cream of chicken soup, sun-dried tomatoes and seasonings to crockpot. Cook on high for 3 hours. When that is done add in your gnocchi, heavy cream and baby spinach and cook for another 30 minutes on high. Top with the Parmesan cheese. Serve with garlic toast. 

Sausage & Rice Casserole

 Last night we failed to pull anything out of the freezers for dinner. Seems to be a common thing here in this house and it’s quite frustrating. I went to my fridge and saw the mushrooms I had gotten and remembered there was a TikTok recipe for them. Y’all this was the EASIEST meal!  Sausage & Rice Casserole Ingredients  1 lb Jimmy Dean sausage 2 pouches of Uncle Ben’s long grain and wild rice  1 1/2 C. Mozzarella or Cheddar cheese, shredded  1 can of golden mushroom soup 1 package of sliced mushrooms  Directions Preheat oven to 350 degrees. Brown sausage, add in mushrooms once almost all the way cooked. While that’s cooking down, pop your rice pouches in the microwave per the instructions. When they’re done add them in with the sausage and mushrooms. Also add in your can of golden mushroom soup and the shredded cheese. Mix it all up and put in the oven for 15 minutes. 

Creamy Au Gratin Potatoes

Oh man! This side dish is absolutely one we will be keeping around! It’d be really good on the smoker too! I do feel like it’s missing some seasonings so the next go around we will play with adding in some smoked paprika and garlic too!  Creamy Au Gratin Potatoes Ingredients   8 medium russet potatoes, thinly sliced 2 medium onion, sliced into rings salt and ground black pepper to taste 6 tablespoons butter 6 tablespoons all-purpose flour 1 teaspoon salt 4 cups milk 3 cups shredded Cheddar cheese   Directions   Gather all ingredients. Preheat the oven to 400 degrees F (200 degrees C). Butter a 2-quart casserole dish. Layer 1/2 of the potatoes in the bottom of the prepared casserole dish; season with salt and pepper. Layer onion slices over top, then top with remaining potatoes. Season again with salt and pepper. Melt butter in a medium saucepan over medium heat. Gradually whisk in flour and salt and cook, whisking constantly until raw flour flavor has cooked off, abo...
