Bouncing Back & BBQ Chicken

It has been a while as you can see from when my last post was done. So we are going to step back into it with a short and sweet post.

This summer I discovered a new crockpot recipe. It is super easy and is super yummy! It has been a hit both times I have made it so I thought I should share it here. 

BBQ Chicken

1 cup BBQ sauce (I used Sweet Baby Rays Original)
1/4 cup brown sugar, packed
1/4 cup zesty Italian salad dressing (I used Kraft)
2 lbs boneless skinless chicken breasts

Place chicken in a crockpot, mix together the BBQ sauce, brown sugar and zesty Italian dressing and pour over chicken. Cook on high for 4 hours (or low for 8 hours). When chicken is finished, shred it. The chicken is great served with coleslaw on a bun or without the coleslaw. Whichever you prefer. Heck one of my children prefers to just eat the chicken itself and completely skip the bun. 

When I have made it, I have tripled the recipe as I have made it for a crowd of 11+ each time and my husband usually packs a meal from whatever we make for his lunch for the next day. 

I have to say, I am NOT a fan up straight up BBQ sauce at all but this, this I absolutely love! I think between the brown sugar and the zesty Italian salad dressing it really dulls out the BBQ. So even if you can't stand BBQ sauce like me, give this a try! You might just find that this is your new go-to potluck recipe.
