I’ve got lots of recipes flowing through my screen and this one popped up and it looked like something the family would enjoy so I figured “why not?” I can happily report this will make its way into our rotation of meals in the winter. It’s the definition of comfort food!!
Chicken Cobbler
Ingredients
1 rotisserie chicken, deboned
1 stick of butter
1 can cream of chicken soup
2 cups chicken broth or chicken stock
2 cups of milk
1 box of Red Lobster cheddar bay biscuit mix + the seasoning packet
12 oz of whatever frozen veggies you like
Salt/pepper/garlic powder/onion powder to taste
Instructions
*This is IMPORTANT: Do NOT mix! This is a layer dish*
-melt the stick of butter and pour in the bottom of your 9x13 dish
-place your chicken in the dish next
-place your chicken in the dish next
-top with your frozen veggies
-add your seasonings
-whisk the biscuit mix, the seasoning packet and the milk together in a bowl then pour it evenly over the veggies
-whisk together in a bowl the chicken broth/stock and the can of cream of chicken, pour evenly over the biscuit mixture
-put in the oven uncovered at 375* for 45-60 minutes or until the top is golden brown
