Parmesan Baked Salmon

It's Ash Wednesday and for those of you who are Catholic you know that means from here on out for the next 40 days there is no meat on Fridays and Ash Wednesday. SO Joe being the seafood lover that he is took out some of the salmon that he caught while salmon fishing in Sturgeon Bay last summer for lunch today.

I personally dislike seafood VERY much! So I didnt eat it but he and the kids LOVED this recipe. He asked me "aren't you going to take a picture of the salmon?'  I responded with "why?" and the response I got was "well you take pictures of everything else you make that we like so I thought you could take a picture of this for your blog". Ok husband! Fine! I HATE salmon but that doesnt mean my blog readers do so here it is just for you.


Parmesan Baked Salmon

1/4 cup Mayo
2 tbsp grated parmesan cheese
1/8 tsp. ground red pepper (cayenne)
4 salmon filets (1 lb.), skins removed
2 tsp. lemon juice
10 Ritz crackers, crushed (about 1/2 cup)

Heat oven to 400 degrees. Mix mayo, cheese and pepper until well blended. Place fish in shallow foil-lined pan; drizzle with lemon juice. Cover with mayo mixture and cracker crumbs. Bake 12 to 15 minutes or until fish flakes easily with fork.
